This season, that quiet spirit finds its way into the kitchen through a special two-week collaboration between Kaminori and Guest Chef Iwan Bedjo. Each week brings a different story. A different expression of comfort.

Known for his thoughtful, refined approach, Chef Bedjo believes simplicity isn’t the absence of effort. It’s the presence of intention. For Kaminori becomes his canvas, to show how flavor unfolds slowly, and every detail is chosen with care.
Week 1
A bowl of Truffle Beef Ramen with creamy tori paitan broth, paired with a hand roll where crispy chicken skin meets fluffy rice and a kick of Piri Kara sauce. On 27 July, Chef Bedjo himself will take over Kaminori’s kitchen for one day only.
Week 2
Something new is simmering—a second round of flavors awaits. Expect something drier, deeper, and just as thoughtfully crafted. Chef Bedjo returns to the counter on 9 August.

Truffle Beef Ramen with Tori Paitan Broth
This bowl is made for quiet comfort. Anchored in a rich, creamy tori paitan broth, tender beef and just a hint of truffle come together in balance. Not to overwhelm, but to warm. It’s indulgent, but measured. Familiar, yet deeply personal.

Crispy Chicken Skin Roll with Piri Kara Sauce
This one tells the story—the hand roll where texture takes the lead. Crisp chicken skin over soft rice, wrapped in nori, with a kiss of heat from Piri Kara sauce. Bold yet precise, it’s a bite that surprises without shouting.
